Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 teaspoon salt

20 caramel candies, unwrapped

3 tablespoons heavy cream or milk

2 cups milk chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the vanilla extract and mix until combined.
  4. Gradually add the flour and salt to the mixture, mixing until a dough forms.
  5. Shape the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
  6. Use your thumb or the back of a spoon to make an indentation in the center of each dough ball.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. While the cookies are baking, prepare the caramel filling. In a microwave-safe bowl, combine the unwrapped caramel candies and heavy cream or milk. Microwave in 30-second intervals, stirring in between, until smooth and melted.
  9. Remove the cookies from the oven and immediately re-press the indentations with the back of a spoon if needed.
  10. Spoon a small amount of the caramel filling into each indentation.
  11. Allow the cookies to cool completely on the baking sheet.
  12. Once cooled, melt the milk chocolate chips in the microwave in 30-second intervals, stirring in between, until smooth.
  13. Drizzle or spread the melted chocolate over the caramel-filled cookies.
  14. Let the chocolate set before serving or storing.

Notes

For best results, use room temperature butter to ensure proper creaming with the sugar.

If you prefer a firmer cookie, store them in the refrigerator.
