1 cup unsalted butter, softened
1 cup granulated sugar
1 teaspoon vanilla extract

20 caramel candies, unwrapped
3 tablespoons heavy cream or milk
2 cups milk chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the vanilla extract and mix until combined.
- Gradually add the flour and salt to the mixture, mixing until a dough forms.
- Shape the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
- Use your thumb or the back of a spoon to make an indentation in the center of each dough ball.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- While the cookies are baking, prepare the caramel filling. In a microwave-safe bowl, combine the unwrapped caramel candies and heavy cream or milk. Microwave in 30-second intervals, stirring in between, until smooth and melted.
- Remove the cookies from the oven and immediately re-press the indentations with the back of a spoon if needed.
- Spoon a small amount of the caramel filling into each indentation.
- Allow the cookies to cool completely on the baking sheet.
- Once cooled, melt the milk chocolate chips in the microwave in 30-second intervals, stirring in between, until smooth.
- Drizzle or spread the melted chocolate over the caramel-filled cookies.
- Let the chocolate set before serving or storing.
Notes
For best results, use room temperature butter to ensure proper creaming with the sugar.
