Ingredients
1 ½ cups all-purpose flour
¾ cup granulated sugar
½ tsp salt
2 tsp baking powder
⅓ cup vegetable oil
1 large egg
⅓ cup milk (or more if needed)
1 tsp vanilla extract
1 cup fresh blueberries
Instructions
- Preheat oven to 400°F (200°C) and line a muffin tin with paper liners.
- In a large bowl, combine flour, sugar, salt, and baking powder. Whisk to blend.
- In another bowl, mix oil, egg, milk, and vanilla until smooth.
- Pour wet ingredients into dry ingredients and gently fold until just combined. Be careful not to overmix!
- Gently fold in blueberries.
- Divide batter evenly among muffin cups, filling each about 3/4 full.
- Bake for 18-20 minutes, or until golden and a toothpick inserted comes out clean.

Notes
For best results, use fresh blueberries. If using frozen, do not thaw them.
