1 1/2 cups granulated sugar

8 eggs, separated

Instructions
- Preheat and Prepare Pastry: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Shape the Pastry: Roll out the thawed puff pastry on a floured surface. Cut into squares (8-12, depending on size) and prick each square with a fork.
- Bake Pastry: Bake for 12-15 minutes until golden and crisp. Cool completely on a wire rack.
- Make the Custard: In a saucepan, heat milk over medium heat until steaming (but not boiling). In a bowl, whisk together sugar, flour, salt, and egg yolks until smooth. Gradually add the hot milk while whisking to avoid curdling. Return to the saucepan and cook, whisking constantly, until thickened (5-7 minutes). Stir in vanilla extract and cool slightly.
- Assemble: Slice the cooled puff pastry squares in half. Spoon custard onto the bottom half, then place the top half back on.
- Serve: Optionally, dust with powdered sugar and serve either chilled or at room temperature.
