Description

These Vegan Almond Croissant Cookie Bars are a delightful fusion of flaky croissant texture and sweet cookie flavor. With a perfect almond glaze on top, these bars are the ideal breakfast or snack for anyone craving a buttery, almond-infused treat without the dairy. Quick to make, naturally vegan, and irresistibly delicious, this recipe will become a go-to favorite for all!

Ingredients

1 1/2 cups all-purpose flour

1/2 cup almond flour

1/4 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup coconut oil, melted

1/4 cup almond milk (or any non-dairy milk)

1/2 teaspoon vanilla extract

1/2 teaspoon almond extract

1/4 cup sliced almonds (for topping)

For the glaze:

1/4 cup powdered sugar

1 tablespoon almond milk

1/4 teaspoon almond extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.

  2. In a large bowl, mix together the all-purpose flour, almond flour, granulated sugar, baking powder, and salt.

  3. Add in the melted coconut oil, almond milk, vanilla extract, and almond extract. Mix until a dough forms.

  4. Press the dough into the prepared pan, smoothing it with a spatula.

  5. Sprinkle sliced almonds over the dough.

  6. Bake for 20-25 minutes, until golden brown and a toothpick inserted comes out clean.

  7. While baking, whisk together powdered sugar, almond milk, and almond extract to make the glaze.

  8. Once baked, cool the bars for 10-15 minutes, then drizzle with the glaze.

  9. Let the bars cool completely before slicing and serving.

Notes

For a sweeter treat, adjust the sugar levels in both the dough and glaze.

Add-ins like chocolate chips, chopped walnuts, or pecans can provide extra flavor and texture.

Store in an airtight container at room temperature for 3-4 days, or refrigerate for up to a week. Reheat for a fresh taste.
