Ingredients

1 cup rolled oats

3/4 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/3 cup coconut oil or vegan butter, melted

1/2 cup brown sugar

1/4 cup unsweetened applesauce

1 teaspoon vanilla extract

1/2 cup raisins


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix the rolled oats, flour, baking soda, baking powder, cinnamon, and salt.
  3. In a separate large bowl, whisk together the melted coconut oil (or vegan butter), brown sugar, applesauce, and vanilla extract until smooth.
  4. Gradually incorporate the dry ingredients into the wet ingredients, stirring until a dough forms. Fold in the raisins.
  5. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
  6. Bake for 10-12 minutes, or until the edges are lightly golden. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For variation, substitute raisins with dried cranberries, dates, or dairy-free chocolate chips.
