Ingredients
1 1/2 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 1/4 cups almond milk (or any plant-based milk)
1/4 cup vegetable oil
1 teaspoon vanilla extract
1 tablespoon ground flaxseed (optional, for extra binding)
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, mix together the almond milk, vegetable oil, vanilla extract, and ground flaxseed (if using).
- Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly thick.
- Lightly grease the waffle iron with oil or cooking spray. Pour the batter into the waffle iron, using a ladle, and cook according to the manufacturer’s instructions until golden and crisp.
- Carefully remove the waffles and serve with your favorite toppings such as maple syrup, fresh fruit, or vegan butter.
Notes
You can add fruit like fresh berries or banana slices to the batter for extra flavor and sweetness.
For a warm, spiced flavor, consider adding cinnamon or nutmeg to the dry ingredients.
For a gluten-free version, use a gluten-free flour blend instead of all-purpose flour.
Leftover waffles can be stored in an airtight container in the fridge for up to 2-3 days, or frozen for longer storage.
