Description

White Forest Cake is a delectable twist on the classic Black Forest cake, featuring moist white cake layers, sweet cherries, and luscious whipped cream, all topped with white chocolate shavings. Perfect for celebrations, this elegant dessert offers a light and refreshing alternative to its chocolate counterpart.


Ingredients

2 1/2 cups all-purpose flour

2 1/2 tsp baking powder

1/2 tsp salt

1 cup unsalted butter, softened

1 1/2 cups sugar

4 large eggs

1 tsp vanilla extract

1 cup milk

1 can (21 oz) cherry pie filling

2 cups heavy whipping cream

1/4 cup powdered sugar

1 tsp vanilla extract (for whipped cream)

8 oz white chocolate, shaved or grated


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the flour mixture to the butter mixture, alternating with milk. Mix until just combined.
  5. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely.
  6. Whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  7. To assemble, place one cake layer on a serving plate, spread a layer of whipped cream, and spoon half of the cherry pie filling over it.
  8. Add the second cake layer, cover with more whipped cream, and top with the remaining cherry pie filling. Garnish the cake with white chocolate shavings.

Notes

Ensure the cakes are fully cooled before assembling to prevent the whipped cream from melting.

Fresh cherries can be substituted for cherry pie filling if desired.

White chocolate ganache can be used in place of whipped cream for a richer flavor.
