Ingredients

4 ears of corn, cut into 12 inch rounds

1 cup all-purpose flour

1/2 cup cornmeal

1 tablespoon Cajun seasoning (store-bought or homemade)

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional)

Salt and pepper, to taste

Vegetable oil, for frying

2 tablespoons melted butter (optional)

Instructions

  1. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  2. In a large bowl, mix the flour, cornmeal, Cajun seasoning, garlic powder, smoked paprika, cayenne pepper, salt, and pepper.
  3. Pat the corn rounds dry with a paper towel to ensure proper coating.
  4. Coat the corn rounds in the flour mixture, shaking off excess.
  5. Fry in batches to prevent overcrowding, cooking for 3-5 minutes until golden and crispy.
  6. Remove from oil and drain on a plate lined with paper towels.
  7. (Optional) Toss in melted butter and sprinkle with additional Cajun seasoning.
  8. Serve hot and enjoy!

Notes

Adjust the cayenne pepper to modify the spice level.

For a lighter version, use an air fryer at 375°F (190°C) for 8-10 minutes.

Customize with Parmesan cheese or a sweet-spicy honey drizzle for added flair.
