Ingredients
1 pound Italian sausage (mild or spicy)
4 slices bacon, chopped
1 medium onion, diced
3 cloves garlic, minced
4 cups chicken broth
4 medium russet potatoes, sliced into thin half-moons
2 cups kale, stems removed and leaves chopped
1 cup heavy cream
Salt and pepper to taste
Red pepper flakes (optional, for garnish)
Instructions
- In a large pot, cook Italian sausage over medium heat until browned. Remove and set aside, leaving 1 tablespoon of grease.
- Add chopped bacon to the pot; cook until crispy. Remove and set aside with sausage.
- Sauté diced onion in the grease for 3-4 minutes until softened. Add garlic; cook for 1 minute.
- Pour in chicken broth; add potatoes. Bring to a boil, then reduce heat and simmer for 10-15 minutes, until potatoes are tender.
- Stir in sausage, bacon, and kale; simmer for 5 minutes to wilt the kale.
- Lower heat and stir in heavy cream. Season with salt, pepper, and optional red pepper flakes.
- Serve hot with crusty bread or a fresh salad.
Notes
For a lighter option, substitute heavy cream with half-and-half or coconut milk.
Yukon Gold or red potatoes can replace russets for a firmer texture.
Spinach works well as a kale substitute.
Mash some potatoes or add a cornstarch slurry to thicken the soup.
To freeze, omit the cream and add it after reheating.
