Ingredients
1 1/2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp ground cinnamon
3 medium ripe bananas, mashed (about 1 cup)
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1/3 cup vegetable oil (or melted butter)
1 large egg
1 tsp vanilla extract
Optional: 1/2 cup chopped walnuts or chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
- In a medium bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, mix mashed bananas, brown sugar, granulated sugar, oil, egg, and vanilla extract until smooth.
- Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.
- If using, gently fold in walnuts or chocolate chips.
- Divide batter evenly among muffin cups, filling each about 3/4 full.
- Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
- Let muffins cool in the pan for 5 minutes before transferring to a wire rack.
Notes
For best results, use overripe bananas with brown spots.
Muffins can be stored in an airtight container at room temperature for 3 days or frozen for up to 3 months.
