This easy-to-make casserole combines the convenience of pre-cooked chicken and stuffing mix with the rich tastes of cream of chicken and celery soups, all baked to perfection.


Ingredients

4 cups cooked and shredded chicken

1 box stuffing mix or 4 cups homemade stuffing

1 can (10.5 oz) condensed cream of chicken soup

1 can (10.5 oz) condensed cream of celery or mushroom soup

1 cup sour cream or plain yogurt

1/2 cup milk or chicken broth

1/2 cup butter, melted

1 small onion, finely chopped (optional)

Salt and pepper, to taste

Fresh herbs (like parsley), for garnish


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the stuffing mix according to the package directions, or use your homemade stuffing. Optionally stir in the finely chopped onion.
  3. In a large bowl, mix together the condensed soups, sour cream, and milk or chicken broth until well combined. Season with salt and pepper.
  4. In a greased 9×13-inch baking dish, layer half of the prepared stuffing. Spread the shredded chicken over the stuffing, then pour the creamy soup mixture on top, spreading evenly. Top with the remaining half of the stuffing, and drizzle the melted butter over.
  5. Bake for 30-40 minutes or until bubbly and golden brown on top.
  6. Let cool slightly before serving, garnished with fresh herbs.

Notes

For a gluten-free version, use gluten-free stuffing and soups.

Can be made ahead and refrigerated overnight before baking.

Freezes well for up to 3 months. Thaw overnight in the refrigerator and reheat in the oven.
