Ingredients
For the Cookies:
1 cup unsalted butter, softened
1 1/4 cups granulated sugar
1 large egg
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons sour cream
For the Frosting:
1/2 cup unsalted butter, softened
2 cups powdered sugar
2 tablespoons heavy cream
1 teaspoon vanilla extract
Pink food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg, vanilla extract, and sour cream, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Scoop out 1/4 cup portions of dough and roll into balls. Place the dough balls onto the prepared baking sheet, flattening each slightly with the palm of your hand.
- Bake for 9-11 minutes, or until the edges are set but the centers are still soft. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- While the cookies are cooling, prepare the frosting. In a medium bowl, beat together the softened butter, powdered sugar, heavy cream, and vanilla extract until smooth and creamy. Add a few drops of pink food coloring if desired and mix until the color is even.
- Once the cookies have cooled, frost them with a generous layer of frosting.
- Enjoy immediately or store in an airtight container for up to 3 days.
Notes
For best results, use room temperature butter and eggs.
Chilling the cookie dough before baking can help reduce spreading.
Adjust the amount of food coloring to achieve your preferred shade.
