Description

Ingredients

250 g butter (softened)

3/4 cup icing sugar (sifted)

1/2 cup custard powder

1 tsp vanilla essence

2 cups cake flour (sifted)


Instructions

  1. Preheat oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a large mixing bowl, cream softened butter and icing sugar until light and fluffy.
  3. Mix in the vanilla essence.
  4. In another bowl, sift custard powder and cake flour. Gradually combine the dry ingredients with the butter mixture to form a soft dough.
  5. Roll dough into small balls and place on the tray. Flatten slightly with a fork in a crisscross pattern.
  6. Bake for 10-12 minutes until edges turn golden.
  7. Cool completely on a wire rack before serving.

Notes

For a chocolate variation, replace 2 tbsp of custard powder with cocoa powder.

Add lemon zest for a citrusy twist or mix in finely chopped nuts for extra texture.

Store in an airtight container at room temperature for up to 1 week or freeze for up to 3 months.
