Ingredients
1 tablespoon unsalted butter
1/2 cup yellow onion, finely diced
1 small jalapeño, finely chopped (seeds removed for less heat)
2 cups sharp cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
1/2 cup milk (plus more if needed)
1/4 cup heavy cream
1/4 cup diced tomatoes (optional, for topping)
2 tablespoons fresh cilantro, chopped
Salt to taste
Tortilla chips, for serving
Instructions
- Heat the butter in a medium saucepan over medium heat until melted.
- Add the diced onion and jalapeño; sauté for 3-4 minutes until softened and fragrant.
- Lower the heat to medium-low and gradually add the cheeses, one handful at a time, stirring constantly.
- Pour in the milk and heavy cream, stirring continuously until the mixture is smooth and creamy. Adjust the consistency with additional milk if needed.
- Remove from heat and season with salt to taste.
- Transfer the queso to a serving dish and garnish with diced tomatoes and chopped cilantro, if desired.
- Serve immediately with tortilla chips for dipping!
Notes
To prevent graininess, use freshly shredded cheese instead of pre-packaged shredded cheese.
Customize with toppings like chorizo, guacamole, or cotija cheese for added flavor.
Reheat over low heat, adding milk to maintain the creamy texture.
