Ingredients

1 lb ground beef

1/2 cup diced onion

1/2 cup diced green bell pepper

1 can (15 oz) sloppy joe sauce

1 can (16.3 oz) refrigerated biscuit dough, cut into quarters

1 1/2 cups shredded cheddar cheese

Salt and pepper to taste

1 tablespoon olive oil (for sautéing)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.

  3. Stir in the sloppy joe sauce and season with salt and pepper to taste.
  4. Place the quartered biscuit dough evenly in the greased baking dish.
  5. Pour the sloppy joe mixture over the biscuit dough, ensuring the pieces are well-coated.
  6. Sprinkle shredded cheddar cheese evenly on top.
  7. Bake for 25-30 minutes, or until the biscuits are golden and cooked through, and the cheese is bubbly.
  8. Let the casserole cool for a few minutes before serving.

Notes

For a healthier option, substitute ground turkey or chicken for the beef.

You can add extra vegetables such as mushrooms or corn for additional flavor and nutrition.

This casserole can be made ahead of time and stored in the refrigerator for up to 24 hours or frozen for longer storage.
