Ingredients
8 oz feta cheese, crumbled
4 oz cream cheese, softened
2 tablespoons olive oil
1 tablespoon honey
1 teaspoon lemon zest
1 lb fresh strawberries, hulled and halved
1 tablespoon balsamic vinegar
1 teaspoon sugar
Fresh mint leaves, for garnish
Crackers or toasted baguette slices, for serving
Instructions
- Preheat the oven to 375°F (190°C).
- Place the halved strawberries on a baking sheet. Drizzle with balsamic vinegar and sprinkle with sugar. Roast for 15-20 minutes until soft and juicy. Set aside to cool slightly.
- In a food processor, blend feta, cream cheese, olive oil, honey, and lemon zest until smooth and creamy.

For a sweeter dip, add extra honey to the whipped feta mixture or more sugar to the strawberries.
