Ingredients

8 oz feta cheese, crumbled

4 oz cream cheese, softened

2 tablespoons olive oil

1 tablespoon honey

1 teaspoon lemon zest

1 lb fresh strawberries, hulled and halved

1 tablespoon balsamic vinegar

1 teaspoon sugar

Fresh mint leaves, for garnish

Crackers or toasted baguette slices, for serving


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the halved strawberries on a baking sheet. Drizzle with balsamic vinegar and sprinkle with sugar. Roast for 15-20 minutes until soft and juicy. Set aside to cool slightly.
  3. In a food processor, blend feta, cream cheese, olive oil, honey, and lemon zest until smooth and creamy.
  4. Transfer the whipped feta to a serving bowl and top with roasted strawberries.
  5. Garnish with fresh mint leaves and serve with crackers or toasted baguette slices.

Notes

For a sweeter dip, add extra honey to the whipped feta mixture or more sugar to the strawberries.

Serve immediately for the best flavor, or store the components separately in the fridge and assemble just before serving.
