Description

A light and airy 3-ingredient sponge cake made with eggs, sugar, and all-purpose flour. Serve it plain or use it as a versatile base for fruit, cream, jam, and other fillings.

Instructions

  1. Preheat the oven to 180°C (350°F) and line a round cake pan with parchment paper.
  2. Place the eggs and sugar in a large mixing bowl. Beat until the mixture is thick, pale, fluffy, and significantly increased in volume.
  3. Sift the all-purpose flour over the whipped egg mixture, adding it gradually.
  4. Using a spatula, gently fold the flour into the egg mixture with slow movements from the bottom upward. Stop as soon as no streaks of dry flour remain.
  5. Pour the batter into the prepared cake pan and gently smooth the surface.
  6. Bake for 20–25 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool before carefully removing it from the pan. Cool completely before slicing and serving plain or with your favorite toppings and fillings.

Notes

Bring the eggs to room temperature before whipping for better volume and a lighter texture.

Whip the eggs and sugar thoroughly because the incorporated air provides the cake’s lift without baking powder.

Fold the flour gently and avoid overmixing so the batter retains as much air as possible.

Begin checking the cake around the 20-minute mark because baking time can vary by oven and pan size.

For variations, add a small amount of vanilla extract or finely grated lemon or orange zest.

Serve plain, dust with powdered sugar, or fill with whipped cream, fresh berries, jam, or fruit preserves.

Store in an airtight container at room temperature for about 2 days or well wrapped in the refrigerator for up to 4–5 days.

Freeze the completely cooled and tightly wrapped cake for up to 2–3 months, then thaw at room temperature before serving.
