Description

This almond flour apple cake is moist, nutty, and warmly spiced with cinnamon. Naturally sweet and gluten-free, it’s perfect for breakfast, dessert, or an afternoon treat.


Ingredients

2 cups almond flour

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 tsp salt

2 large eggs

1/2 cup coconut sugar

1/4 cup coconut oil, melted

1 tsp vanilla extract

2 cups peeled and diced apples


Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line an 8-inch round cake pan.
  2. In a medium bowl, whisk together almond flour, baking soda, cinnamon, and salt.
  3. In a large bowl, beat the eggs, coconut sugar, melted coconut oil, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients and mix until a thick batter forms.
  5. Fold in the diced apples.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 30 to 35 minutes, until golden and a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Add chopped walnuts or pecans for extra texture.

A pinch of nutmeg enhances the warm spice flavor.

Lemon zest can be added for brightness.

Store at room temperature for up to 2 days or refrigerate for up to 5 days.

Freeze slices tightly wrapped for up to 2 months.
