Description
This moist Applesauce Bread is warmly spiced with cinnamon and vanilla for a comforting quick bread with gentle apple flavor. Enjoy it for breakfast, a snack, or a simple dessert.
Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 large eggs
1 1/2 cups unsweetened applesauce
1/2 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup chopped walnuts, optional
Instructions
- Preheat the oven to 175°C (350°F) and grease a loaf pan well.
- In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, and salt until evenly combined.
- In a separate bowl, beat the eggs, then add the applesauce, vegetable oil, and vanilla extract. Mix until smooth and well combined.
- Pour the wet mixture into the dry ingredients and gently stir just until no dry streaks of flour remain. Avoid overmixing.
- If using walnuts, gently fold them into the batter.
- Transfer the batter to the prepared loaf pan and smooth the top into an even layer.
- Bake for 50–60 minutes, checking near the 50-minute mark. The bread is done when a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool the bread in the pan for about 10 minutes, then remove it and transfer it to a wire rack to cool completely before slicing.
Notes
For extra spice, add a small amount of ground nutmeg, ginger, or cloves.
Pecans can be substituted for walnuts, or the nuts can be omitted completely.
Raisins, dried cranberries, or chocolate chips can be folded into the batter for additional flavor and texture.
For a sweet, lightly crisp topping, sprinkle cinnamon sugar over the batter before baking.
Sweetened applesauce can be used, but consider reducing the granulated sugar to compensate for the added sweetness.
Store completely cooled bread in an airtight container at room temperature for 2–3 days or refrigerate for longer storage.
The bread can be frozen whole or in individual slices. Wrap well and store in a freezer-safe container or bag.
To serve warm, briefly microwave a slice until just heated through. Frozen slices can be thawed at room temperature or gently reheated.
