Description

These Baked Protein Pancake Bowls are soft, fluffy, and packed with protein for a satisfying breakfast. Made with yogurt, protein powder, and simple pantry ingredients, they’re easy to customize with your favorite toppings and perfect for meal prep.

Ingredients

1 egg

50 g vanilla or unflavoured yogurt

70 ml milk (soy, almond, or any milk of choice)

35 g all-purpose flour

25 g vanilla or white chocolate protein powder

5 g zero-calorie granulated sweetener or sweetener of choice

1/2 teaspoon baking powder

Optional toppings: fresh strawberries, blueberries, or raspberries

Optional toppings: chocolate chips or white chocolate chips

Optional toppings: peanut butter or almond butter

Optional toppings: maple syrup or honey

Optional toppings: extra yogurt, chopped nuts, cinnamon, or shredded coconut

Instructions

  1. Preheat the oven to 180°C (356°F). Prepare an oven-safe bowl or ramekin large enough to allow the pancake batter to rise.
  2. Add the egg, yogurt, milk, all-purpose flour, protein powder, sweetener, and baking powder directly to the oven-safe bowl.
  3. Using a fork or small whisk, mix the ingredients until the batter is smooth and well combined, with no large pockets of dry flour or protein powder remaining.
  4. If preparing multiple servings, multiply the ingredients as needed and divide the batter evenly between individual oven-safe bowls, leaving room for the pancakes to rise.
  5. Add optional toppings such as fresh berries, chocolate chips, or chopped nuts before baking, or reserve them for serving.
  6. Place the bowl in the preheated oven and bake for approximately 20–22 minutes, until the top is set, the pancake has risen, and the center is cooked through. Insert a toothpick into the center to check for wet batter if needed.
  7. Carefully remove the bowl from the oven and allow the pancake to cool for 5–10 minutes before serving.
  8. Serve slightly warm with your favorite toppings, such as extra yogurt, fresh fruit, peanut butter, almond butter, or a drizzle of maple syrup.

Notes

Protein powder: Vanilla or white chocolate protein powder works particularly well. Whey and plant-based varieties may absorb liquids differently, so add a small splash of milk if the batter seems unusually thick.

Chocolate variation: Replace a small portion of the flour with unsweetened cocoa powder, use chocolate protein powder, and add a few chocolate chips.

Blueberry variation: Add a handful of fresh or frozen blueberries to the batter before baking.

Peanut butter variation: Swirl a teaspoon of peanut butter into the batter before baking and add more on top when serving.

Cinnamon vanilla variation: Add a pinch of cinnamon and a little vanilla extract. Serve with chopped apples or maple syrup.

Strawberry white chocolate variation: Add chopped strawberries and white chocolate chips, using white chocolate protein powder for extra flavor.

Gluten-free option: Replace the all-purpose flour with a gluten-free all-purpose flour blend and ensure the protein powder and baking powder are certified gluten-free.

Dairy-free option: Use dairy-free yogurt, almond or soy milk, and dairy-free protein powder.

Without protein powder: Replace the protein powder with additional flour and adjust the milk as needed to achieve a thick but pourable batter. The texture and protein content will change.

Avoid dryness: Do not overbake. Begin checking for doneness around the 20-minute mark and measure the flour and protein powder accurately.

Air fryer option: Bake in an air-fryer-safe ramekin at approximately 160°C (320°F) for 12–15 minutes, adjusting as needed until the center is fully cooked.

Make-ahead tip: For the fluffiest texture, bake the batter shortly after mixing. Dry ingredients can be measured the night before and stored separately from refrigerated wet ingredients.

Refrigerator storage: Cool completely and store covered or in airtight containers in the refrigerator for up to 3–4 days. Keep fresh and moist toppings separate.

Freezer storage: Freeze cooled pancakes in freezer-safe containers for up to 2 months. Thaw overnight in the refrigerator before reheating.

Microwave reheating: Microwave refrigerated pancakes for approximately 30–60 seconds, until heated through. Add a small splash of milk if needed to maintain moisture.

Oven reheating: Reheat at 160°C (320°F) for approximately 8–10 minutes, until heated through. Cover loosely with foil if the top begins to dry out.

Meal prep tip: Bake several plain pancake bowls in advance and add different toppings each morning for variety.

Nutrition values are approximate for one plain pancake bowl without optional toppings and will vary depending on the yogurt, milk, protein powder, and sweetener used.
