Ingredients
6 cups fresh spinach
1 cup fresh blueberries
1 cup fresh strawberries, sliced
1/2 cup pecans, toasted
1/2 cup crumbled feta cheese
1/3 cup olive oil
1/4 cup honey balsamic vinegar
1 garlic clove, minced
Instructions
- Toast the pecans in a dry skillet over medium-low heat until fragrant and lightly golden. Let them cool completely.
- Add the spinach, blueberries, sliced strawberries, toasted pecans, and crumbled feta cheese to a large salad bowl.
- In a small bowl, whisk together the olive oil, honey balsamic vinegar, and minced garlic until well combined.
- Pour the dressing over the salad and gently toss until evenly coated.
- Serve immediately for the best flavor and texture.
Notes
Substitute raspberries or blackberries for the strawberries if desired.
Goat cheese can be used instead of feta.
Add grilled chicken, salmon, shrimp, or chickpeas for extra protein.
Walnuts, sliced almonds, or candied pecans make great alternatives to pecans.
Add sliced red onion or avocado for extra flavor and texture.
Store the dressing separately and toss just before serving to keep the spinach crisp.
