Ingredients
1 lb ground beef
1 tablespoon olive oil
1 onion, diced
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon smoked paprika
1 teaspoon dried oregano
1/2 cup tomato sauce
4 large flour tortillas
3 tablespoons spicy mayo
1 cup fried rice
1 cup nacho cheese sauce
1 cup sour cream
1 cup tortilla chips, crushed
1 cup shredded Mexican cheese blend (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat. Sauté the diced onion for about 5 minutes until softened.
- Add the ground beef and cook until browned, breaking it into crumbles as it cooks.
- Season with salt, black pepper, smoked paprika, and oregano. Cook for 1 minute until fragrant.
- Stir in the tomato sauce and simmer for about 5 minutes until well combined.
- Lay the flour tortillas on a clean work surface.
- Spread about 1 tablespoon of spicy mayo down the center of each tortilla.
- Add fried rice, drizzle with nacho cheese sauce, and top with sour cream.
- Sprinkle crushed tortilla chips over the filling, then add a generous scoop of the seasoned beef mixture.
- Fold in the sides and roll each tortilla tightly into a burrito.
- Heat a non-stick skillet or griddle over medium heat.
- If using, sprinkle the shredded Mexican cheese blend directly onto the hot skillet.
- Place each burrito seam-side down onto the melted cheese and grill for 2 to 3 minutes per side until golden brown and crispy.
- Repeat with the remaining burritos and serve hot with extra spicy mayo for dipping.
Notes
Substitute ground turkey or shredded chicken for a lighter option.
Add black beans, corn, or sautéed peppers for extra flavor and texture.
Use pepper jack cheese for a spicier grilled cheese crust.
Assemble burritos ahead of time and refrigerate until ready to grill.
Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months.
Reheat in a skillet or 350°F oven to restore the crispy exterior.
