Description

This hearty grilled cheese burrito combines seasoned ground beef, fried rice, creamy sauces, crunchy tortilla chips, and a crispy cheese crust for an indulgent Tex-Mex-inspired meal. Every bite is packed with bold flavors and satisfying textures.

Ingredients

1 lb ground beef

1 tablespoon olive oil

1 onion, diced

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 cup tomato sauce

4 large flour tortillas

3 tablespoons spicy mayo

1 cup fried rice

1 cup nacho cheese sauce

1 cup sour cream

1 cup tortilla chips, crushed

1 cup shredded Mexican cheese blend (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Sauté the diced onion for about 5 minutes until softened.
  2. Add the ground beef and cook until browned, breaking it into crumbles as it cooks.
  3. Season with salt, black pepper, smoked paprika, and oregano. Cook for 1 minute until fragrant.
  4. Stir in the tomato sauce and simmer for about 5 minutes until well combined.
  5. Lay the flour tortillas on a clean work surface.
  6. Spread about 1 tablespoon of spicy mayo down the center of each tortilla.
  7. Add fried rice, drizzle with nacho cheese sauce, and top with sour cream.
  8. Sprinkle crushed tortilla chips over the filling, then add a generous scoop of the seasoned beef mixture.
  9. Fold in the sides and roll each tortilla tightly into a burrito.
  10. Heat a non-stick skillet or griddle over medium heat.
  11. If using, sprinkle the shredded Mexican cheese blend directly onto the hot skillet.
  12. Place each burrito seam-side down onto the melted cheese and grill for 2 to 3 minutes per side until golden brown and crispy.
  13. Repeat with the remaining burritos and serve hot with extra spicy mayo for dipping.

Notes

Substitute ground turkey or shredded chicken for a lighter option.

Add black beans, corn, or sautéed peppers for extra flavor and texture.

Use pepper jack cheese for a spicier grilled cheese crust.

Assemble burritos ahead of time and refrigerate until ready to grill.

Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months.

Reheat in a skillet or 350°F oven to restore the crispy exterior.
