Description

A sweet and tangy blueberry topping perfect for enhancing any cheesecake, with a balance of sweetness and tanginess from fresh blueberries and lemon juice.

Ingredients

2 cups fresh or frozen blueberries

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon cornstarch

2 tablespoons water

1/2 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, combine the blueberries, sugar, and lemon juice.
  2. Stir the mixture over medium heat and bring it to a simmer.
  3. In a small bowl, mix the cornstarch and water to create a slurry, then add it to the blueberry mixture.
  4. Continue to simmer the mixture for 3-5 minutes, or until it thickens to a syrup-like consistency.
  5. Once it thickens, remove it from the heat and stir in the vanilla extract.
  6. Let the blueberry topping cool to room temperature before pouring it over your cheesecake.

Notes

Spiced Blueberry Topping: Add cinnamon or nutmeg for a cozy, autumnal flavor.

Citrus Twist: Substitute lemon juice with orange juice for a tropical flair.

Honey Sweetened: Replace granulated sugar with honey for a more natural sweetness.

Store leftovers in an airtight container in the fridge for up to a week. Reheat over low heat and adjust with water if needed.
