Ingredients
2 cups fresh or frozen blueberries
1/4 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon cornstarch
2 tablespoons water
1/2 teaspoon vanilla extract
Instructions
- In a medium saucepan, combine the blueberries, sugar, and lemon juice.
- Stir the mixture over medium heat and bring it to a simmer.
- In a small bowl, mix the cornstarch and water to create a slurry, then add it to the blueberry mixture.
- Continue to simmer the mixture for 3-5 minutes, or until it thickens to a syrup-like consistency.
- Once it thickens, remove it from the heat and stir in the vanilla extract.
- Let the blueberry topping cool to room temperature before pouring it over your cheesecake.
Notes
Spiced Blueberry Topping: Add cinnamon or nutmeg for a cozy, autumnal flavor.
Citrus Twist: Substitute lemon juice with orange juice for a tropical flair.
Honey Sweetened: Replace granulated sugar with honey for a more natural sweetness.
Store leftovers in an airtight container in the fridge for up to a week. Reheat over low heat and adjust with water if needed.
