Description
Breakfast Grilled Cheese Eggs is a hearty, satisfying sandwich layered with savory breakfast sausage, fluffy scrambled eggs, and gooey Colby-Jack cheese between buttery grilled sourdough. Perfect for breakfast, brunch, or a comforting quick dinner.
Ingredients
1/2 pound ground breakfast sausage
6 large eggs, beaten
8 slices Colby-Jack cheese
4 tablespoons soft butter, divided
8 slices sourdough bread
Instructions
- Cook and crumble the ground breakfast sausage in a large non-stick skillet over medium heat until browned and no longer pink. Transfer to a paper towel-lined bowl and wipe the skillet clean.
- Melt 2 tablespoons of butter in the skillet over medium-high heat. Add the beaten eggs and gently stir until soft scrambled eggs form and most of the liquid has evaporated. Remove from the heat.
- Discard the paper towel and gently combine the cooked sausage with the scrambled eggs.
- Spread the remaining butter evenly on one side of each slice of sourdough bread.
- Heat the skillet over medium heat. Place one slice of bread butter-side down, then top with one slice of Colby-Jack cheese, about 1/2 cup of the sausage and egg mixture, another slice of cheese, and finish with a second slice of bread butter-side up.
- Cook for 3 to 4 minutes until the bottom is golden brown. Carefully flip and cook the other side until crisp and the cheese has melted completely.
- Transfer to a cutting board, slice in half if desired, and repeat with the remaining ingredients.
- Serve immediately while hot and crispy.
Notes
Substitute cheddar, Swiss, pepper jack, mozzarella, or Monterey Jack cheese for a different flavor.
Add sautéed onions, peppers, spinach, or mushrooms for extra variety.
Texas toast, brioche, or whole wheat bread also work well.
Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months.
Reheat in a skillet or air fryer at 350°F for 4 to 6 minutes for the crispiest results.
