Ingredients

3 large eggs

2 tsp vanilla extract

For the Caramel Topping:

1 cup granulated sugar

¼ cup water

6 tbsp unsalted butter

½ cup heavy cream

½ tsp salt


Instructions

  1. Preheat and Prepare the Pan:
    Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and line the base with parchment paper.
  2. Make the Crust:
    In a bowl, mix graham cracker crumbs, sugar, and melted butter until evenly combined. Press the mixture into the pan’s base. Bake for 8-10 minutes and let it cool.
  3. Prepare the Filling:
    Beat softened cream cheese until smooth. Add sugar and mix until creamy. Blend in sour cream, then beat in the eggs one at a time. Mix in the vanilla extract.
  4. Assemble and Bake:
    Pour the cheesecake filling over the crust. Wrap the springform pan’s base with foil and place it in a larger roasting pan. Fill the roasting pan with hot water halfway up the sides of the springform pan. Bake for 60-70 minutes, until the center is set but slightly jiggly.
  5. Cool the Cheesecake:
    Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour. Transfer to the fridge and chill for at least 4 hours or overnight.
  6. Make the Caramel:
