Description

Soft, chewy cookie bars with classic snickerdoodle flavor and a buttery cinnamon-sugar topping. These easy dessert bars are perfect for sharing, holidays, lunchboxes, or everyday treats.

Ingredients

1 cup unsalted butter, melted

1 1/2 cups granulated sugar

1/2 cup brown sugar

2 large eggs

2 teaspoons vanilla extract

2 3/4 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

2 teaspoons ground cinnamon

2 tablespoons granulated sugar (for topping)

1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line a 9×13-inch baking pan with parchment paper.
  2. Whisk together the melted butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs and vanilla extract and mix until fully combined.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
  5. Gradually stir the dry ingredients into the wet ingredients until a soft dough forms.
  6. Spread the dough evenly into the prepared baking pan.
  7. Mix the topping sugar and cinnamon together, then sprinkle evenly over the dough.
  8. Bake for 22 to 26 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out with a few moist crumbs.
  9. Cool completely in the pan before slicing into 24 bars and serving.

Notes

Add white chocolate chips, chopped pecans, or walnuts for extra flavor and texture.

Drizzle cooled bars with a simple vanilla glaze for a richer dessert.

Add a pinch of nutmeg or cardamom for a warmer spice profile.

Store in an airtight container at room temperature for up to 5 days.

Freeze individual bars for up to 3 months and thaw at room temperature before serving.

Warm individual bars in the microwave for 10 to 15 seconds if desired.
