Description

Cheesy, crispy flour tortillas are filled with seasoned ground beef and melted mozzarella, then pan-fried until golden brown. These satisfying tacos are easy to make and perfect for a comforting family meal.


Ingredients

1 pound 90/10 ground beef

1/2 medium onion, finely chopped

2 tablespoons taco seasoning

2 tablespoons tomato paste

1/4 cup water or beef broth

Salt, to taste

8 small flour tortillas

2 to 3 cups shredded mozzarella cheese

Avocado oil or vegetable oil, for frying

Fresh cilantro, chopped, for garnish


Instructions

  1. Heat 1 tablespoon of oil in a large skillet over medium heat.
  2. Add the chopped onion and cook for 2 to 3 minutes until softened.
  3. Add the ground beef and cook for 4 to 5 minutes, breaking it into small crumbles as it browns.
  4. Stir in the tomato paste, taco seasoning, and water or beef broth. Cook for 3 to 4 minutes until the liquid reduces and the beef is fully cooked. Season with salt to taste.
  5. Place a layer of shredded mozzarella on one half of each tortilla, spoon the beef mixture over the cheese, and top with another layer of cheese.
  6. Fold each tortilla in half and gently press closed.
  7. Heat 3 to 4 tablespoons of oil in a clean skillet over medium heat.
  8. Fry the tacos for about 1 minute per side until golden brown and crispy.
  9. Transfer to a paper towel-lined plate to drain excess oil.
  10. Garnish with chopped fresh cilantro and serve immediately.

Notes

Substitute mozzarella with cheddar, Monterey Jack, pepper jack, or a Mexican cheese blend.

Add diced jalapeños, black beans, or corn for extra flavor and texture.

For a lighter version, bake or air fry the assembled tacos until crispy.

Top with shredded lettuce, diced tomatoes, avocado, sour cream, or salsa before serving.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat in a skillet, oven, or air fryer to maintain crispiness.
