Description

Ingredients

2 large flour tortillas

2 cups cooked chicken breast, shredded or diced

1 cup shredded lettuce

1/2 cup canned corn, drained

1/2 cup black beans, rinsed and drained

1/2 cup diced tomatoes

1/4 cup red onion, finely chopped

1/2 cup shredded cheddar cheese

1/2 cup tortilla strips or crushed tortilla chips

1/4 cup mayonnaise

2 tablespoons sour cream

1 tablespoon lime juice

1 teaspoon chili powder

1/2 teaspoon cumin

1/2 teaspoon garlic powder

Salt to taste

Black pepper to taste


Instructions

  1. In a small bowl, mix the mayonnaise, sour cream, lime juice, chili powder, cumin, garlic powder, salt, and black pepper until smooth and creamy.
  2. In a large mixing bowl, combine the cooked chicken, corn, black beans, diced tomatoes, red onion, and shredded cheddar cheese.
  3. Pour the prepared sauce over the chicken mixture and toss until evenly coated.
