Description
This easy Crustless Coconut Pie bakes into a tender, custard-like dessert filled with coconut and topped with a lightly golden finish. It requires just 10 minutes of preparation and can be served warm or chilled.
Ingredients
1 cup shredded coconut, sweetened or unsweetened
1/2 cup granulated sugar
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
4 large eggs
1 cup whole milk
1 teaspoon vanilla extract
1/4 cup butter, melted and cooled
Optional: whipped cream or toasted coconut flakes for garnish
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a pie dish.
- In a large mixing bowl, whisk together the eggs, granulated sugar, whole milk, vanilla extract, and melted and cooled butter until smooth and evenly combined.
- Add the all-purpose flour, baking powder, and salt. Whisk until the batter is smooth with no obvious lumps of flour.
- Stir in the shredded coconut until evenly distributed throughout the batter.
- Pour the batter into the prepared pie dish and spread the coconut evenly if necessary.
- Bake for 35–40 minutes, until the top is lightly golden and the center appears set rather than wet. A slight softness in the center is fine because the filling will continue to firm as it cools.
- Remove from the oven and allow the pie to cool before slicing. Serve slightly warm or chilled, garnished with whipped cream or toasted coconut flakes if desired.
Notes
Use sweetened coconut for a sweeter pie or unsweetened coconut for a less sugary coconut flavor.
For extra toasted flavor, lightly toast some or all of the shredded coconut and allow it to cool before adding it to the batter.
Add a little lemon, lime, or orange zest for a fresh citrus variation.
For richer coconut flavor, replace part of the whole milk with full-fat coconut milk.
A small amount of almond extract can be added alongside the vanilla for extra aroma.
Allow the pie to cool thoroughly for firmer texture and cleaner slices.
Store covered in the refrigerator for 3–4 days.
To warm an individual slice, microwave gently for 10–20 seconds at a time to avoid making the custard rubbery.
Freezing is not recommended because thawing can alter the smooth custard texture.
