Description

Fresh cucumber cream cheese bites feature a creamy lemon-dill spread layered on bread and topped with crisp cucumber slices. This quick no-cook appetizer is refreshing, elegant, and perfect for brunches, parties, or light snacks.

Ingredients

4 oz cream cheese, softened

2 tbsp fresh dill, chopped

Zest of 1/2 large lemon

Juice of 1/2 large lemon

Kosher salt, to taste

Freshly ground black pepper, to taste

12 small slices white bread or pretzel rolls, sliced

1/2 English cucumber, thinly sliced

Additional fresh dill for garnish (optional)

Extra lemon zest for garnish (optional)

Instructions

  1. Place the softened cream cheese in a small bowl.
  2. Add the chopped dill, lemon zest, and lemon juice. Mix until smooth and creamy.
  3. Season the mixture with kosher salt and freshly ground black pepper to taste.
  4. Arrange the bread slices or pretzel roll slices on a serving platter.
  5. Spread the cream cheese mixture evenly over each piece of bread.
  6. Top each piece with thin cucumber slices.
  7. Sprinkle lightly with black pepper and a little extra lemon zest.
  8. Garnish with additional fresh dill if desired and serve immediately.

Notes

Use whole wheat bread for a heartier flavor.

Substitute fresh chives or parsley for dill if desired.

Add thinly sliced radishes for extra crunch and color.

Flavored cream cheese such as garlic and herb works well.

For a lower-carb option, use cucumber rounds instead of bread.

Top with smoked salmon for a more substantial appetizer.

Store the cream cheese mixture in the refrigerator for up to 3 days and assemble just before serving.
