Description

A creamy, tangy pasta salad loaded with crunchy dill pickles, tender rotini, and Colby Jack cheese. This refreshing side dish is perfect for potlucks, barbecues, picnics, and family meals.


Ingredients

16 oz rotini pasta

2/3 cup dill pickle juice, divided

2 cups baby dill pickles, chopped

8 oz Colby Jack cheese, cut into small cubes

1 small white onion, finely chopped

1 cup mayonnaise

1/2 cup sour cream

2 tablespoons fresh dill, chopped

1/4 teaspoon salt

1/4 teaspoon black pepper


Instructions

  1. Cook the rotini according to the package directions, adding about 1 teaspoon of salt to the boiling water.
  2. Drain the pasta and rinse under cold water to stop the cooking process.
  3. Transfer the pasta to a large bowl, pour 1/3 cup of dill pickle juice over it, stir, and let it rest while preparing the remaining ingredients.
  4. Chop the dill pickles and Colby Jack cheese into small cubes and finely chop the onion.
  5. Drain any excess pickle juice from the pasta and return it to the mixing bowl.
  6. Add the chopped pickles, cheese, and onion to the pasta and stir to combine.
  7. In a separate bowl, whisk together the mayonnaise, sour cream, remaining 1/3 cup dill pickle juice, fresh dill, salt, and black pepper until smooth.
  8. Pour the dressing over the pasta mixture and gently stir until evenly coated.
  9. Serve immediately or refrigerate for 1 to 2 hours before serving for the best flavor.

Notes

For the best flavor, chill the salad for 1 to 2 hours before serving.

Sharp cheddar, Monterey Jack, or mozzarella can be substituted for Colby Jack cheese.

Add cooked Turkey, chopped celery or shredded chicken for extra flavor and texture.

If the salad thickens after refrigeration, stir in a little extra mayonnaise, sour cream, or pickle juice before serving.

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Do not freeze, as the dressing may separate after thawing.
