Description

This easy one-bowl banana bread is moist, tender, and packed with sweet banana flavor. Made with simple pantry ingredients, it is perfect for breakfast, snacks, or a comforting homemade dessert.


Ingredients

2 overripe bananas, mashed

1/2 cup canola oil

1/2 cup milk

1/2 cup caster sugar or superfine sugar

1/2 cup packed brown sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt


Instructions

  1. Preheat the oven to 160°C (320°F) for a fan-assisted oven or 180°C (355°F) for a conventional oven. Grease a 9 x 5-inch loaf pan and line it with baking paper.
  2. Mash the overripe bananas in a large mixing bowl until mostly smooth.
  3. Add the canola oil, milk, caster sugar, brown sugar, eggs, and vanilla extract. Stir until smooth and well combined.
  4. Sift the flour, baking powder, and salt directly into the bowl.
  5. Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan and spread the top evenly.
  7. Bake for 45 to 55 minutes, or until the loaf is golden brown and a skewer inserted into the center comes out clean or with a few moist crumbs.
  8. Cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.

Notes

Use heavily spotted or dark-skinned bananas for the best flavor and sweetness.

Do not overmix the batter to keep the bread soft and tender.

Add 1/2 to 3/4 cup chocolate chips, 1/2 cup chopped walnuts or pecans, 1 teaspoon ground cinnamon, or 1/2 cup shredded coconut for easy variations.

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.

Freeze the whole loaf or individual slices for up to 3 months.

Warm slices in the microwave for 10 to 20 seconds before serving if desired.
