Ingredients
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon red pepper flakes (optional)
1 (28-ounce) can crushed tomatoes
4 cups chicken broth
2 cups cooked, shredded chicken
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup small pasta (such as ditalini or elbow macaroni)
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1/4 cup chopped fresh parsley or basil (for garnish)
1/2 cup panko breadcrumbs (optional, for topping)
Instructions
- Sauté Aromatics – Heat olive oil in a large pot over medium heat. Add diced onion and cook for 2-3 minutes until softened. Stir in garlic, oregano, basil, and red pepper flakes. Cook for another 30 seconds until fragrant.
- Add Liquids & Chicken – Pour in crushed tomatoes and chicken broth, stirring to combine. Bring to a simmer. Add shredded chicken, salt, and pepper. Cover and simmer for 10 minutes.
- Cook Pasta – Stir in pasta and cook according to package instructions (about 8-10 minutes) until tender.
- Melt Cheese – Reduce heat to low and stir in Parmesan cheese until melted and incorporated.
