Description

Ingredients

4 very ripe bananas, mashed

1/2 cup unsalted butter, softened

1/4 cup white sugar

1/4 cup packed brown sugar

2 large eggs, room temperature

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup semi-sweet chocolate chips, divided


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9 x 5-inch loaf pan.
  2. Mash the ripe bananas in a small bowl until mostly smooth.
  3. In a large mixing bowl, beat the softened butter with the white sugar and brown sugar until light and fluffy.
  4. Add the eggs, mashed bananas, and vanilla extract, mixing until well combined.
  5. Stir in the flour, baking soda, baking powder, and salt just until no dry streaks remain.
  6. Fold in three-quarters of the chocolate chips until evenly distributed.
  7. Transfer the batter to the prepared loaf pan and sprinkle the remaining chocolate chips over the top.
  8. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Cool the bread in the pan for 20 minutes before removing, slicing, and serving.

Notes

Use thawed frozen bananas after draining excess liquid.

Do not overmix the batter to keep the loaf soft and tender.

Add chopped walnuts or pecans for extra crunch.

Mix in a pinch of cinnamon for warm spice.

Substitute dark, milk, or white chocolate chips if desired.

Store at room temperature for up to 3 days, refrigerate for up to 1 week, or freeze slices for up to 3 months.

Warm slices in the microwave for 15 to 20 seconds or toast lightly before serving.
