A hearty Tex-Mex casserole layered with tortillas, seasoned beef, beans, and melted cheese, baked until bubbly and satisfying. Perfect for a quick, family-friendly dinner.
Ingredients
6 to 8 medium flour tortillas
1.5 pounds ground beef
2 packets taco seasoning
1 can (15 ounces) black or kidney beans, rinsed and drained
3 cups cheddar cheese, shredded
Cooking spray
Shredded lettuce, for serving (optional)
Diced tomatoes, for serving (optional)
Sour cream, for serving (optional)
Instructions
- Preheat the oven to 375°F.
- Cook the ground beef with taco seasoning according to packet directions, using both packets.
- Lightly grease a 9 x 13-inch baking dish with cooking spray.
- Arrange a layer of tortillas across the bottom, tearing as needed to fit.
- Spread half of the seasoned beef over the tortillas, then add half of the beans and about 1 cup of shredded cheese.
- Add another layer of tortillas and repeat with the remaining beef, beans, and another layer of cheese.
- Finish with a final layer of tortillas and top with the remaining cheese.
- Bake for about 25 minutes, until cheese is melted and bubbly.
- Let cool slightly before slicing and serve with optional toppings.
Notes
Substitute ground turkey or chicken for a lighter version.
Try Monterey Jack, pepper Jack, or Mexican blend cheese for variation.
Add corn, salsa, green chiles, or jalapeños for extra flavor.
Use refried beans for a creamier texture.
Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months.
