Ingredients
1 cup gluten-free all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup milk (dairy or non-dairy)
1 large egg
1 teaspoon vanilla extract
1 tablespoon melted butter or oil
1 teaspoon apple cider vinegar
Instructions
- Whisk together the gluten-free flour, sugar, baking powder, baking soda, and salt in a medium bowl.
- In another bowl, combine the milk, egg, vanilla extract, melted butter or oil, and apple cider vinegar until smooth.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix.
- Let the batter rest for about 5 minutes to thicken slightly.
- Heat a non-stick skillet or griddle over medium heat and lightly grease the surface.
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles appear on the surface and the edges begin to set, about 2–3 minutes.
- Flip the pancakes and cook for another 1–2 minutes until golden brown on both sides.
- Serve warm with syrup, fruit, yogurt, or desired toppings.
Notes
Add blueberries or chocolate chips to the batter for extra flavor.
Use coconut sugar instead of regular sugar for a different sweetness profile.
Mix in a pinch of cinnamon for a warm flavor.
To make dairy-free pancakes, use non-dairy milk and oil instead of butter.
