3/4 cup granulated sugar

1 teaspoon lemon juice
2 teaspoons cornstarch
Biscuit Topping:
1 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter, cold and cubed
1/4 cup boiling water
Topping:
3 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
Instructions
- Prepare the Peach Filling:
- Preheat your oven to 425°F (218°C).
- In a large bowl, combine sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Mix well to coat evenly.
- Transfer the peach mixture into a 9×13 inch baking dish.
- Prepare the Biscuit Topping:
- In a medium bowl, mix flour, granulated sugar, brown sugar, baking powder, and salt.
- Using a pastry cutter or two forks, cut in cold, cubed butter until the mixture resembles coarse crumbs.
- Stir in boiling water until just combined.
- Assemble the Cobbler:
- Drop spoonfuls of the biscuit topping evenly over the peach filling.
- In a small bowl, combine granulated sugar and ground cinnamon. Sprinkle evenly over the biscuit topping.
- Bake and Serve:
