Description

Ingredients

1 sweet tart crust (1011 inch tart shell), baked and cooled

1 batch vanilla pastry cream, chilled

4 cups fresh fruit (strawberries, blueberries, raspberries, blackberries, kiwi, mandarin segments, peaches, or other seasonal fruit)

1/3 cup apricot preserves

1 tablespoon water


Instructions

  1. Prepare the vanilla pastry cream and refrigerate until fully chilled and set, at least 2 hours.
  2. Bake the sweet tart crust according to your preferred recipe and allow it to cool completely.
  3. Place the cooled tart shell onto a serving platter.
  4. Spread the chilled pastry cream evenly across the bottom of the tart shell.
  5. Arrange the fresh fruit decoratively over the pastry cream.
  6. Combine the apricot preserves and water in a microwave-safe bowl.
  7. Heat for about 30 seconds until softened, then stir until smooth. Strain if desired.
  8. Brush the glaze lightly over all the fruit using a pastry brush.
  9. Refrigerate until ready to serve.

Notes

Prepare the tart crust and pastry cream a day ahead for easier assembly.

Use seasonal fruits for the best flavor and appearance.

For extra richness, brush the crust with melted chocolate before adding the pastry cream.

Store covered in the refrigerator for up to 2 days.

Do not freeze the assembled tart, as the fruit and pastry cream may lose texture.
