Description

A hearty British Full English Breakfast featuring golden crispy toast, warm baked beans, juicy chicken sausages, buttery mushrooms, grilled tomatoes, and perfectly fried eggs. This satisfying breakfast is ready in just 25 minutes and makes a delicious weekend brunch.

Ingredients

4 slices bread

1 cup baked beans

1 tablespoon oil

1 tablespoon butter

4 chicken sausages

2 medium tomatoes

8 mushrooms

4 large eggs

Salt to taste

Black pepper to taste

2 spring onions, chopped

Instructions

  1. Add the baked beans to a small saucepan over medium-low heat. Stir occasionally until heated through, then keep warm while preparing the remaining ingredients.
  2. Lightly butter the bread using a little of the measured butter and toast in a frying pan or toaster until golden brown and crispy. Set aside.
  3. Heat the oil in a large frying pan over medium heat. Add the chicken sausages, halved tomatoes, and cleaned mushrooms. Turn the sausages occasionally and cook until evenly browned and their internal temperature reaches 165°F (74°C). Cook the tomatoes until lightly caramelized and the mushrooms until tender and golden.
  4. Add a little of the remaining butter to the frying pan. Allow it to melt around the sausages and vegetables for extra flavor. Season the mushrooms and tomatoes lightly with salt and black pepper.
  5. Transfer the cooked sausages and vegetables to a warm plate. Add the remaining butter to the frying pan, then carefully crack in the eggs. Fry over medium-low heat until the whites are set and the yolks reach your preferred doneness. Season with salt and black pepper.
  6. Divide the crispy toast, warm baked beans, cooked chicken sausages, fried eggs, mushrooms, and grilled tomatoes between two serving plates. Arrange each component separately for a traditional Full English Breakfast presentation.
  7. Sprinkle the chopped spring onions over the breakfast and serve immediately while everything is hot.

Notes

Vegetarian variation: Replace chicken sausages with vegetarian sausages and add sautéed spinach, grilled halloumi, or extra mushrooms.

Extra protein: Add another egg or chicken sausage to each serving, or include grilled turkey slices.

Spicy variation: Sprinkle chili flakes over the eggs or add hot sauce to the baked beans.

Lighter option: Use whole-grain toast, reduce the butter, and cook the sausages and vegetables in a nonstick frying pan with less oil.

Traditional British variation: Add grilled back bacon, black pudding, fried bread, or hash browns.

Mushroom tip: Button mushrooms or cremini mushrooms work especially well because they develop a rich, savory flavor when cooked in butter.

Egg tip: Sunny-side-up eggs with soft yolks are delicious, but over-easy, scrambled, or fully cooked fried eggs also work.

Keep warm: Place cooked sausages and vegetables on an oven-safe plate in a low oven while finishing the eggs. Keep the baked beans warm in a covered saucepan over very low heat.

Make ahead: Cook the sausages, prepare the baked beans, and clean the mushrooms in advance. Reheat the prepared components and cook the eggs and toast fresh before serving.

Refrigeration: Store leftover cooked sausages, mushrooms, tomatoes, baked beans, and eggs in separate airtight containers. Refrigerate within two hours and consume within 3–4 days.

Reheating: Warm sausages and vegetables in a frying pan and heat baked beans separately in a saucepan until thoroughly hot. Reheat toast in a toaster or oven. Freshly cooked eggs provide the best texture.

Freezing: Freeze cooked chicken sausages and baked beans in freezer-safe containers for up to 2–3 months for best quality. Avoid freezing fried eggs, cooked mushrooms, and grilled tomatoes because their texture may deteriorate.

Serving suggestion: Serve immediately with freshly brewed tea or coffee for a comforting British-style breakfast.
