Description

This creamy Garden Vegetable Spread combines tender sautéed vegetables, cream cheese, mozzarella, and aromatic herbs for a fresh, savory appetizer. Perfect for serving with crackers, toasted bread, fresh vegetables, or as a delicious sandwich filling.

Ingredients

1 tablespoon olive oil

½ cup finely chopped onion

½ cup grated carrot

½ cup finely diced zucchini

¼ cup finely diced red bell pepper

2 cloves garlic, minced

¼ teaspoon salt

¼ teaspoon black pepper

½ teaspoon dried Italian seasoning

½ teaspoon paprika

3 tablespoons cream cheese, softened

3 tablespoons mayonnaise

¼ cup finely shredded mozzarella cheese

1 tablespoon fresh parsley, finely chopped

1 teaspoon lemon juice

Instructions

  1. Heat the olive oil in a medium skillet over medium heat until warm.
  2. Add the finely chopped onion, grated carrot, diced zucchini, and red bell pepper. Sauté for 6–8 minutes, stirring frequently, until the vegetables are tender and most of the excess moisture has evaporated.
  3. Stir in the minced garlic, salt, black pepper, dried Italian seasoning, and paprika. Cook for another minute until fragrant, being careful not to burn the garlic.
  4. Remove the skillet from the heat and allow the vegetable mixture to cool slightly before combining it with the creamy ingredients.
  5. Transfer the cooled vegetables to a medium mixing bowl. Add the softened cream cheese, mayonnaise, shredded mozzarella, chopped parsley, and lemon juice.
  6. Mix thoroughly with a spoon or spatula until the vegetables are evenly coated and the mixture becomes creamy. Keep the vegetables finely textured rather than blending completely smooth.
  7. Cover the bowl and refrigerate for at least 30 minutes to allow the spread to firm up and the flavors to develop.
  8. Stir gently before serving and transfer to a serving bowl. Garnish with additional parsley if desired. Serve chilled with crackers, toasted baguette slices, pita chips, cucumber rounds, carrot sticks, or use as a sandwich or wrap filling.

Notes

For a spicy variation, add crushed red pepper flakes, finely chopped jalapeño, or a pinch of cayenne pepper.

For extra cheesy flavor, increase the mozzarella slightly or add 1 tablespoon finely grated Parmesan cheese.

For a lighter, tangier spread, replace some or all of the mayonnaise with thick plain Greek yogurt.

For additional herbal flavor, mix in fresh dill, basil, or chives alongside the parsley.

For a roasted vegetable variation, roast the carrots, zucchini, onions, and bell peppers until tender, then cool before combining with the creamy ingredients.

For a dairy-free version, substitute plant-based cream cheese and mozzarella and use dairy-free mayonnaise.

If using frozen vegetables, thaw and drain thoroughly before sautéing to prevent excess moisture.

For a thicker consistency, cook off additional vegetable moisture, add a little extra softened cream cheese, or refrigerate longer.

Store leftovers in an airtight container in the refrigerator for up to 3–4 days, provided the spread has been cooled and refrigerated promptly.

Freezing is not recommended because the cream cheese and mayonnaise may separate and become grainy or watery after thawing.

Prepare up to one day ahead and refrigerate until serving for enhanced flavor.

Serve chilled or slightly cool. Do not leave the spread at room temperature for more than 2 hours.
