Description

This garlic butter lettuce, tomato, and grilled chicken sandwich is crispy, juicy, and packed with fresh flavor. Buttery toasted bread, tender grilled chicken, and fresh vegetables come together for a satisfying lunch or dinner.

Ingredients

8 slices thick-cut bread (Texas toast or favorite bread)

1/2 cup unsalted butter, softened

23 cloves garlic, minced

1 teaspoon dried Italian herbs

1/2 teaspoon red pepper flakes (optional)

2 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt, to taste

Black pepper, to taste

4 lettuce leaves

2 medium tomatoes, sliced

4 slices cheese (optional, cheddar or mozzarella)

Mayonnaise or sauce of choice (optional)

Instructions

  1. In a small bowl, mix the softened butter, minced garlic, Italian herbs, and red pepper flakes until fully combined.
  2. Preheat a grill pan or outdoor grill over medium heat.
  3. Drizzle the chicken breasts with olive oil and season both sides with salt and black pepper.
  4. Grill the chicken for 5 to 7 minutes per side, or until fully cooked and the juices run clear. Let the chicken rest for a few minutes before slicing.
  5. Spread the garlic butter mixture evenly on one side of each bread slice.
  6. Heat a skillet over medium heat and toast the bread slices butter-side down until golden brown and crispy.
  7. Assemble the sandwiches by layering grilled chicken, lettuce, tomato slices, cheese if using, and mayonnaise or sauce if desired.
  8. Top with another slice of toasted bread, cut in half, and serve warm.

Notes

Use sourdough bread or ciabatta rolls for extra texture and flavor.

Add caramelized onions for a richer sandwich.

Swap chicken breasts for chicken thighs for extra juiciness.

Try spicy mayo, ranch dressing, or garlic aioli for different flavor variations.

Add avocado slices for a creamy and fresh twist.

Store leftover grilled chicken in an airtight container in the refrigerator for up to 3 days.

Keep vegetables separate from the bread until serving to maintain crispness.

Reheat chicken in a skillet or microwave before assembling fresh sandwiches.

Toast bread in a skillet before serving to restore crispiness.
