Description

Ingredients

1 lb shrimp, peeled and deveined

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 zucchini, sliced

1 bell pepper, chopped

1 cup cherry tomatoes, halved

1/4 cup grated parmesan cheese

2 tablespoons fresh parsley, chopped


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the shrimp to the pan and season with garlic powder, onion powder, red pepper flakes (if using), salt, and pepper.
  3. Cook the shrimp for 2-3 minutes on each side until they are pink and fully cooked through. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the zucchini, bell pepper, and cherry tomatoes. Sauté for 4-5 minutes until the veggies are tender and lightly browned.
  5. Return the shrimp to the skillet and toss everything together. Sprinkle with parmesan cheese and cook for an additional 1-2 minutes, allowing the cheese to melt and coat the shrimp and veggies.
  6. Garnish with fresh parsley before serving.

If using frozen shrimp, ensure they are fully thawed before cooking for the best texture.

For a dairy-free version, omit the parmesan cheese or use a dairy-free alternative like nutritional yeast.
