Description

This garlic scape compound butter is bright, savory, and packed with fresh seasonal flavor. Fresh garlic scapes, lemon zest, herbs, and butter come together to create a versatile spread perfect for bread, vegetables, seafood, and grilled meats.


Ingredients

1 stick salted butter, softened

Zest of 1 lemon

1/2 cup garlic scapes, finely chopped

2 tablespoons fresh chives, chopped

1 tablespoon fresh parsley, chopped

1/2 teaspoon red pepper flakes

1/4 teaspoon black pepper

Salt, to taste


Instructions

  1. Finely mince the garlic scapes, chives, and parsley in a food processor, or chop them very finely by hand.
  2. Place the softened butter in a small mixing bowl.
  3. Add the garlic scapes, chives, parsley, lemon zest, red pepper flakes, black pepper, and a pinch of salt.
  4. Mix thoroughly until the herbs and seasonings are evenly distributed throughout the butter.
  5. Transfer the butter mixture onto a sheet of parchment paper or plastic wrap.
  6. Shape the butter into a compact log, roll tightly, and twist the ends to seal.
  7. Refrigerate for 3 to 4 hours, or until completely firm.
  8. Unwrap, slice into rounds, and serve as desired.

Notes

Use unsalted butter if you prefer full control over the seasoning.

Add grated Parmesan for a savory twist or honey for a touch of sweetness.

Substitute rosemary and thyme for the parsley and chives for an earthy variation.
