This easy recipe is packed with rich umami flavors, combining buttery sautéed mushrooms, aromatic herbs, and melty cheese on perfectly toasted bread. Perfect for entertaining or a cozy night in!

Ingredients

4 slices of sourdough or French bread

2 tablespoons butter

1 tablespoon olive oil

3 cloves garlic, minced

8 ounces cremini or button mushrooms, sliced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon dried thyme

1/4 cup heavy cream (optional for extra richness)

1 cup shredded Gruyère or mozzarella cheese

2 tablespoons fresh parsley, chopped

1/4 cup grated Parmesan cheese

Red pepper flakes (optional, for heat)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Sauté mushrooms: Heat butter and olive oil in a skillet over medium heat. Add garlic and cook for 30 seconds. Stir in mushrooms, salt, pepper, and thyme, then cook for 5-7 minutes until soft and golden.
  3. Optional cream: Stir in heavy cream and simmer for 1-2 minutes, then remove from heat.
  4. Toast bread: Place bread slices on the baking sheet and lightly toast in the oven for 5 minutes.
  5. Assemble: Spoon the mushroom mixture over each toast and sprinkle with shredded cheese.
  6. Bake: Return to the oven for 8-10 minutes, until cheese is melted and bubbling.
  7. Garnish & serve: Sprinkle with Parmesan, parsley, and red pepper flakes if desired. Serve warm.

Notes

Swap Gruyère or mozzarella with cheddar, Swiss, or blue cheese for variety.

Add crispy bacon, prosciutto, or a fried egg for a heartier meal.

Use gluten-free bread for a gluten-free version.

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in a 350°F oven for 5 minutes.
