Description

Sweet Hawaiian rolls layered with juicy baked beef, melty cheese, buttery onions, and tangy pickles create the ultimate cheeseburger sliders. These easy baked sliders are perfect for family dinners, game days, and casual gatherings.


Ingredients

2 pounds 80/20 ground beef

12 Hawaiian rolls

11 slices Colby Jack cheese or American cheese

1 large sweet onion, diced

24 dill pickle slices

6 tablespoons butter, divided

1 teaspoon salt

1 teaspoon cracked black pepper

1/2 cup mayonnaise

1 1/2 tablespoons ketchup

1 tablespoon yellow mustard

2 teaspoons pickle juice

1/4 teaspoon cayenne pepper

Sesame seeds for topping (optional)


Instructions

  1. Preheat the oven to broil. Slice the Hawaiian rolls horizontally and place them cut-side up on a lined baking sheet. Brush the insides with 4 tablespoons melted butter and broil for 3 to 4 minutes until lightly golden.
  2. Reduce the oven temperature to 350°F. In a large bowl, mix the ground beef with salt and black pepper. Press the meat evenly into a 9×13-inch baking dish and bake for 20 minutes.
  3. While the beef bakes, cook the diced onion over low heat with 1 tablespoon butter until soft and browned, about 15 minutes.
  4. In a small bowl, stir together the mayonnaise, ketchup, mustard, pickle juice, and cayenne pepper to make the burger sauce.
  5. Remove the beef from the oven and drain excess juices. Layer the pickle slices over the bottom buns, place the baked beef slab on top, add the cheese slices, and spread the buttery onions evenly over the cheese.
  6. Place the top buns on, brush them with the remaining 1 tablespoon melted butter, and sprinkle sesame seeds on top if desired.
  7. Bake the sliders for about 15 minutes until the cheese is melted and everything is heated through.
  8. Slice into 12 sliders and serve warm with the burger sauce for dipping.

Notes

Swap Colby Jack cheese with cheddar, provolone, or pepper jack for different flavors.

Add crispy turkey for a smoky variation.

Ground turkey or chicken can be used instead of beef for a lighter option.
