Description

Ingredients

1 cup instant oats

3/4 cup whole wheat flour

1 1/2 teaspoons baking powder

1 1/2 teaspoons ground cinnamon

2 tablespoons melted coconut oil

1 large egg

1 teaspoon vanilla extract

1/2 cup honey

1 cup finely diced apple


Instructions

  1. Whisk together the oats, whole wheat flour, baking powder, cinnamon, and salt in a medium bowl.
  2. In a separate bowl, whisk the melted coconut oil, egg, vanilla extract, and honey until smooth.
  3. Add the dry ingredients to the wet ingredients and stir until fully combined.
  4. Fold in the finely diced apple.
  5. Cover the dough and chill in the refrigerator for 30 minutes.
  6. Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
  7. Divide the dough into 15 portions, place them on the prepared baking sheet, and gently flatten each portion.
  8. Bake for 11 to 14 minutes, or until lightly golden around the edges.
  9. Cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
