Ingredients
1 cup instant oats
3/4 cup whole wheat flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1/8 teaspoon salt
2 tablespoons coconut oil or unsalted butter, melted and slightly cooled
1 large egg, room temperature
1 teaspoon vanilla extract
1/2 cup pure maple syrup
3/4 cup freshly grated carrots
Instructions
- Whisk together the instant oats, whole wheat flour, baking powder, cinnamon, and salt in a medium bowl.
- In a separate bowl, whisk the melted coconut oil or butter with the egg and vanilla extract until smooth.
- Stir the maple syrup into the wet mixture until fully combined.
- Gradually add the dry ingredients to the wet ingredients and mix just until no dry streaks remain.
- Fold the freshly grated carrots into the dough.
- Cover and chill the dough in the refrigerator for 30 minutes.
- Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
- Scoop the dough into 14 rounded portions, place on the prepared baking sheet, and gently flatten each cookie.
- Bake for 12 to 15 minutes, until the centers are slightly soft.
- Cool the cookies on the baking sheet for at least 15 minutes before transferring to a wire rack.
Notes
Add chopped walnuts, pecans, raisins, or unsweetened shredded coconut for extra flavor and texture.
For additional spice, mix in a pinch of ground nutmeg or ginger.
Drizzle cooled cookies with a light cream cheese glaze for a sweeter dessert.
Substitute whole wheat flour with a gluten-free baking blend if desired.
Store in an airtight container at room temperature for up to 3 days, refrigerate for up to 1 week, or freeze for up to 3 months.
