Description

A quick and satisfying healthy tuna melt wrap with a creamy, tangy filling, sweet corn, and melted cheese, all crisped to golden perfection. It’s a light yet protein-packed comfort meal ready in minutes.


Ingredients

1 can skipjack or yellowfin tuna, drained

2 tablespoons plain Greek yogurt

1/2 tablespoon Dijon mustard

Juice of 1/2 lemon (about 1 tablespoon)

1/4 cup corn

1/4 cup red onion, finely diced

1 tablespoon dill relish or capers

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1/4 cup shredded mozzarella cheese

1 large burrito-size wrap or tortilla

A little olive oil for the pan


Instructions

  1. In a medium bowl, mix the drained tuna with Greek yogurt, Dijon mustard, lemon juice, corn, red onion, relish or capers, garlic powder, and black pepper until well combined.
  2. Warm the tortilla for 10–20 seconds under a damp paper towel in the microwave until soft and pliable, then lay it flat.
  3. Sprinkle shredded cheese near one end of the tortilla, leaving a small border around the edges. Spoon the tuna mixture over the cheese.
  4. Fold in the sides, bring up the bottom, and roll tightly into a wrap.
  5. Heat a skillet or grill pan over medium heat with a little olive oil. Place the wrap seam-side down and cook for 3–4 minutes, pressing gently, until golden and crisp.
  6. Flip and cook for another 2–3 minutes, lowering heat if needed, until both sides are crisp and the cheese is melted.

Notes

Swap mozzarella with cheddar or spicy cheese for a stronger flavor.

Add chopped celery or pickles for extra crunch.

Use a whole wheat wrap for a lighter option.

Add hot sauce or chili flakes for heat.

Store leftovers wrapped in the fridge for up to 1 day and reheat in a skillet for best texture.

Greek yogurt can be replaced with mayonnaise or a mix of both.
