Description

Ingredients

1 1/2 cups fresh blueberries

1 tablespoon all-purpose flour (for coating blueberries)


Instructions

  1. Preheat the oven to 325°F and grease and flour a 10-inch Bundt pan or loaf pan.
  2. Cream the softened butter and granulated sugar together until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk, mixing just until combined.
  6. Stir in the lemon zest, lemon juice, and vanilla extract.
  7. Toss the blueberries with 1 tablespoon flour, then gently fold them into the batter.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 70 to 85 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool the cake in the pan for 15 minutes, then transfer to a wire rack to cool completely before serving.
