Description

A bright, creamy, no-bake chia pudding layered with a silky lemon cashew cream for a refreshing and wholesome treat. Perfect for breakfast, a healthy snack, or a light dessert.


Ingredients

1/4 cup chia seeds

1 cup oat milk (for chia pudding)

Zest of 1 lemon

2 tablespoons maple syrup (for chia pudding)

1/4 teaspoon vanilla extract

1/4 teaspoon sea salt

1 cup raw cashews, soaked and drained

1/2 cup oat milk (for lemon cashew cream)

2 tablespoons maple syrup (for lemon cashew cream)

2 tablespoons lemon juice

1/4 teaspoon turmeric

1/2 teaspoon lemon extract

Fresh berries (optional garnish)

Additional lemon zest (optional garnish)


Instructions

  1. Whisk together the chia seeds, oat milk, lemon zest, maple syrup, vanilla extract, and sea salt until well combined.
  2. Refrigerate for at least 3 hours or overnight, stirring once or twice during the first hour for a smoother texture.
  3. Soak the raw cashews in hot water for about 1 hour, then drain well.
  4. Add the soaked cashews, oat milk, maple syrup, lemon juice, turmeric, and lemon extract to a blender.
  5. Blend until completely smooth and creamy, scraping down the sides as needed.
  6. Divide the chilled chia pudding evenly among four serving jars or glasses.
  7. Spoon the lemon cashew cream over each pudding layer.
  8. Refrigerate the assembled puddings for an additional 2 to 3 hours to firm up.
  9. Serve chilled and garnish with fresh berries or extra lemon zest if desired.

Notes

Use certified gluten-free oat milk if preparing a gluten-free version.

Almond milk or coconut milk can be substituted for oat milk.

Add fresh berries between the layers for extra flavor and texture.

Top with crushed pistachios or toasted almonds for added crunch.

Store in airtight containers in the refrigerator for up to 4 days.

If the pudding thickens during storage, stir in a splash of oat milk before serving.

Freezing is not recommended as the texture may change after thawing.
